Different Types of Saccharification Enzymes?

Lactose-intolerant people do not produce the enzyme lactase; hence they cannot digest lactose.

Environmental factors such as temperature, pH, and pressure can all impact enzyme activity. (For most fermentable materials, the mash of hot water and the raw material is heated to extremely high temperatures for the enzymes to function.)

The following are different types of saccharification enzymes. 

 

1. Alpha-Amylase 

Heat-stable alpha-amylase is used during the starch liquefaction stage to resist a hot cook. α-Amylase causes the degradation of starch molecules in the solution and breaks them into small dextrins.

 

2. Glucoamylase 

The glucoamylase enzyme breaks down the glycosidic bonds from dextrins to produce glucose during the starch saccharification stage. Glucoamylase hydrolyses the bond from non-reducing ends of starch dextrins, which leads to glucose production.

 

3. Cellulase 

Cellulase enzymes reduce the viscosity of barley, rye, or wheat mash. It is a multi-component enzyme system that usually contains endoglucanase and beta-glucosidase that is responsible for decomposing cellulase polysaccharides as it breaks down the glycoside bond.

 

4. Beta-Glucanase 

Simply put, Beta-Glucanase or β-glucanases is an enzyme used to hydrolyze β-glucan. It enhances the saccharification process in brewing and promotes a better conversion rate of starch. Β-glucanases also help release extra sugar and help to control viscosity of the mash to achieve smooth saccharification and ethanol production.
